Snacks that boost immunity

  • Use yogurt, banana, sweet potato (a natural antihistamine) or avocado to thicken it
  • Instead of ice cubes and ice cream, which dilute the flavor and add unhealthy sugar, use frozen ingredients like shredded kale, gourds, and pre-cut fruit (especially if it’s hard to peel or out of season).
  • It’s best to use frozen ingredients, as out-of-season ingredients are more likely to have been harvested during their natural growth cycle.

Bland cake… because it’s all bland

  • 1 cup of nettle tea
  • 2 lemons (peeled and juiced)
  • 2 tablespoons local honey
  • 1 pint blueberries (preferably fresh)
  • 1 dragon fruit (diced)
  • 200g all-purpose flour
  • 50g almond flour
  • baking powder 10 grams
  • 5 grams of salt
  • 200g unsalted butter
  • 355 grams sugar
  • 9 egg yolks
  • Whole milk 225ml
Instructions:
  • While water is boiling in a kettle or pot, preheat oven to 385 degrees.
  • Brew 1 cup of nettle tea. Add lemon juice, zest, and honey.Then let it cool down
  • Generously butter the inside of a bundt mold and place the blueberries and dragon fruit in the bottom. Pour in the chilled tea and set aside.
  • Sift together all-purpose flour, almond flour, baking powder, and salt into a large bowl.
  • In the bowl of a standing mixer fitted with the paddle attachment, cream the butter and sugar until fluffy.
  • While mixing on low speed, drop in the egg yolks one at a time.
  • Once fully mixed, slowly add 1/4 of the flour mixture. Then add 1/4 of the milk and repeat alternately until all ingredients are mixed. Be careful not to overmix or the cake will become tough.
  • Pour the batter over the fruit and bake for 35 minutes, until the top springs slightly when tapped.
  • Resist the temptation and let it cool in the pan for at least 30 minutes before inverting it onto a plate.
