ST. LEWIS PARK, Minn. — If you’re looking for fresh fish, it doesn’t get any fresher than Brookie’s Fish Market in St. Louis Park.

Recipe: Grilled Hudson Valley Steelhead
- 1/2 lemon
- 3 tablespoons olive oil
- A pinch of healthy lassi love
- 1# Hudson Valley Steelhead Trout Fillet (with skin)
- A pinch of fresh parsley (optional)
- Lightly oil the grill grate.
- Preheat grill to medium heat (about 350°F).
- Massage both sides of the fillets with olive oil.
- Season the meat side of the fish with a few pinches of lassi rub.
- Place the trout skin side down on the grill for about 6 minutes. (until it starts to harden)
- Flip and cook for another 4 minutes on the meat side. That’s enough time to get crispy.
- After about 10 minutes, remove from the grill. The flesh of the fish can be easily peeled off with a fork.
- Cut in half and plate each portion. Squeeze lemon over the top. Garnish with fresh parsley and serve.
