Hi guys! It’s like living in Washington State when it’s raining. Larry cleaned my garden before it started raining. I hope all the mothers had a wonderful Mother’s Day too. I spent the day with my children and grandchildren. We had a whirlwind weekend celebrating Mother’s Day, middle grandson Evan’s graduation, and oldest grandson Ethan’s 21st birthday. We were out all weekend.

One of the gifts I received for Mother’s Day was a new scale. I asked for it and her daughter Shannon bought it for me. I started thinking about what it would be like to be stuck at home due to the coronavirus and everyone had gained over 15 pounds. The other day I had to go to the doctor and had to wear a stupid mask to the doctor. When the nurse called my name and returned, she asked me to step on the scale. I definitely didn’t want to do that, so when she got tested, she said to her, “That mask is really heavy.” She just turned and looked at me. I don’t think she found it as interesting as I did. The only good thing about this mask is that you can put an M&M candy or some kind of small candy inside to snack on during the day and no one will notice. I once saw someone selling scales on Facebook Marketplace. Honey, that’s the way to go. Just remove the scales that are lying around. None of them are accurate. The reason I wanted a new scale was because when I got it, it said I weighed 102 pounds. I kept trying and he weighed 102 pounds. Even knowing that each leg weighed 102 pounds definitely made me feel better for a while. lb. I was a member of the Hartford Think Thin Diet Club. I named it “Fat Farm”. I’ve been going there for years and someone asked me if it worked and I pointed to myself and said, “It does!” I have not been a good example or spokesperson for the club. We were more of a social club than a diet club, but we certainly had fun. That being said, I found a great recipe for Orange Creamsicle Cookies. A friend from my neighborhood brought me a case full of white chocolate chips, so I was looking for a recipe. Have a wonderful week! Try to stay dry.

orange cream cookie
15.25 oz white cake mix (1 box)
3oz orange jelly box
2 tablespoons orange zest
8 tablespoons salted butter (softened)
2 eggs (room temperature)
11 oz white chocolate chips
Preheat the oven to 350 degrees and line a cookie sheet with parchment paper. In a large mixing bowl, combine white cake mix, orange jelly, and orange zest until thoroughly combined. Add butter and eggs to bowl. Using a hand mixer or stand mixer, mix the ingredients until combined, about 2 minutes. Mix white chocolate chips into cookie dough. Add 1 tablespoon of the dough and roll into a ball. The dough is sticky and is easier to handle when cold, so keep it chilled. Place on cookie sheet 2 inches apart and bake for 10-13 minutes or until edges are set. Remove from the oven and let cool for about 10 minutes. Please enjoy it.
