These Chicken Smashburgers are featured in Matt Horn’s new cookbook, “Kowbird: Amazing Chicken Recipes,” out May 28th. (Quarto Publishing)
It’s no surprise that this cookbook, inspired by Matt Horn’s chicken-centric Coubird restaurant, puts a chicken spin on the ubiquitous Smashburger, adding ground chicken instead of the usual chuck.

1 pound (454 g) ground chicken
1 teaspoon salt
1/2 teaspoon black pepper
Garlic powder 1/2 teaspoon
4 sandwich buns (toasted)
Shredded lettuce (for serving)
Sliced tomatoes (for serving)
favorite seasonings for serving

Heat a large skillet over medium heat.
Form the ground chicken into 4 patties. Season all over with salt, pepper, and garlic powder.
Place the patty in the pan and use a spatula to press it down to “smash” it. Cook until cooked through, at an internal temperature of 165°F, about 10 minutes, turning halfway through.
Place the burger on the toasted bun and top with lettuce, tomato, and your favorite seasonings.
