Cinco de mayo recipes

Hi!

As Cinco de Mayo (which is this Monday) approaches, I wanted to share some recipes to get you ready for the fiesta.

I have posted some recipes before, impact It works well for Cinco de Mayo. These include:

cauliflower spanish rice

… A delicious and healthy take on traditional Spanish rice (Click to see).

steak fajita salad

…unlike many salads, it combines both raw and cooked (and spiced) ingredients. (Click here to view).

We recommend adding refried beans, guacamole dip, salsa, tortilla chips, and sangria to the above for a great celebratory meal. Here are my tips for making this.

refried beans

I prepare my refried beans by simply opening a can of vegetarian refried beans, dumping the contents into a bowl, adding a teaspoon of cumin, and stirring. Stir in a few drops of hot sauce, then top with shredded pepper jack cheese and cook until warm and the cheese has melted.

Guacamole dip

Peel 2 ripe avocados and remove the seeds. Place the avocado in a large mixing bowl. Add 1/4 finely chopped red onion, 3 tablespoons finely chopped fresh cilantro, 3 pods of garlic either finely chopped or in a garlic press, half a finely chopped ripe plum tomato, and a pinch of salt. Mix the ingredients with a fork and mash the avocado. Then add the juice of 1 lime and stir everything again to mix. You can also optionally add a few drops of hot sauce. Serve with tortilla chips.

sangria

Using a bottle of sweet red wine, pour the contents into a large pitcher or bowl. Add a small amount of fruit, whatever you have on hand. Grapes, apples, limes, oranges, strawberries, and peaches go well together. Next, add half a cup of orange juice and half a can of soda. You can add flavor to this. Finally add the juice of 1 fresh lime. mix. Pour into a chilled glass or serve over ice.
