Having friendly colleagues who work hard with you is a valuable perk in any job.
In addition to sharing horror stories about more difficult work days, coworkers talk about their weekend plans, favorite cars, pets, and family activities. If you’re really lucky and get along well enough, your co-workers will share their favorite recipes with you too.
Darrell Wages, who lives in Kenton with his wife and daughter, works as a second-shift team leader in the shipping and receiving department at Smilico, Ohio in Bluffton. He shared his favorite recipes with his colleague Tim, and Tim taught me the ins and outs of spam cooking.
I’ve never tried Spam, and I probably wouldn’t have been interested in trying it once. One of the many things I’ve learned since facing the fear and horror of having my skull sliced open and a softball-sized tumor cut out and most of it gouged out is that I now try the unfamiliar. It means facing some discomfort and even anxiety. It’s nothing compared to brain surgery.
Because of that, I’ve become much more open to trying new things, including different (even things that sound weird or taste bad at first) foods. I’ve found that I like most of the things I’ve tried and I’m very excited. I also learn something from the many mistakes and complete failures that lead to inedible meals. I’ll try it again. And, if I can, I’ll pass on what I learned in hopes of giving someone an idea (or at least a laugh).
Darrell said he has been making the Spam Pineapple Mashed Potatoes recipe for the past 37 years.
“As long as I’ve been married, I’ve been successful,” Darrell said. “It was sent to me by his wife’s father, Edward Purcell, when we lived in New Hampshire.”

“It’s easy and traditional. It also reminds my wife and I of New Hampshire when we fix it up. Our daughter really likes it, and now her friends do too,” Darrell said.
The next time a colleague asks you to lend a hand when you’re tired and unmotivated, look on the bright side. A grateful co-worker may reward you when the task is completed. New recipes are easy to make, fun to try, and delicious to add to your collection.

• 12oz can of Spam
• 15 oz can pineapple slices
• 32 oz family size Bob Evans Mashed Potatoes (or make your own)
Preheat oven to 350 degrees. Spray a casserole dish or baking pan with nonstick spray. Place Spam on the bottom of the plate and layer the pineapple slices on top. Spoon the mashed potatoes and spread over the pineapple. Bake at 350 degrees for 30 minutes.
