
This recipe makes a great breakfast in bed for Mother’s Day this year
There may be no better way to start Mother’s Day than by serving your mom breakfast in bed. Having a homemade meal before a mother gets out of bed sets the right tone for a day that celebrates what mothers have done and continue to do for their children.

Makes 8 servings
6 large eggs
1 3/4 cups nonfat milk
1 teaspoon sugar
1 teaspoon powdered cinnamon
1 teaspoon vanilla essence
1/4 teaspoon salt
1 loaf (1 pound) French bread, diced
1 package (12 oz) frozen unsweetened mixed berries
2 tablespoons cold butter
1/3 cup packaged brown sugar
confectioners’ sugar and maple syrup (optional)
Combine first 6 ingredients. Place bread cubes in a 13-by-9-inch or 3-quart baking dish coated with cooking spray. Pour the egg mixture over it. Cover and refrigerate for 8 hours or overnight.
Preheat oven to 350°F. Remove the berries from the freezer, remove the French toast from the refrigerator, and leave until the oven heats up. Cover and bake the French toast for 30 minutes.
In a small bowl, crumble the butter and add the brown sugar. Top french toast with berries. Sprinkle with brown sugar mixture. Bake uncovered for 15 to 20 minutes, until a knife inserted in the center comes out clean. If desired, sprinkle with confectioners’ sugar and serve with syrup.
