JBS’ Principe line of Italian specialty meats is experiencing significant growth thanks to the opening of a new production plant in Springfield, Missouri in 2023.
Principe’s flagship product, Prosciutto di San Daniele, is unique in the industry because it is made from all-natural ingredients, said Ilaria Bijoli, Principe’s senior marketing manager.
Principe also makes prosciutto di Parma, soppressata, mortadella, pancetta and other specialty meats perfect for charcuterie boards, she added.
Principe has had to increase production to meet strong demand, and Bijoli said the continued success of its charcuterie is the main reason for that. Principe said the pork market will continue to grow at double-digit rates for at least the next two years.
Bijoli said charcuterie is now completely mainstream and consumers are looking for new flavors, especially products with more authentic flavors and better health profiles. This is a perfect fit for Toa Principe, which, unlike many of its competitors, uses only whole pig muscle meat and no added artificial ingredients.

Italian meat retailer Veroni focuses on the health benefits of meat.
At the 2024 Winter Fancy Food Show, Veroni introduced a range of products that claim to be low in sodium, starting with Salame Milano to-go trays.
Veroni says this is the first uncured product with a low sodium intake and no added nitrates or nitrites.
Veroni also draws attention to its product’s “humanely raised meat” claim.
“We source our pork from sustainable farms that follow animal welfare programs,” says Veroni. “The pork used is processed and stored completely separate from other pork and pork, and is identified with a unique label throughout the manufacturing process.”
Emanuela Bigi, Veroni’s marketing manager, said that with “Humanely Raised,” Veroni hopes to offer American pork lovers the best of Italian pork experiences.
“We also want to cater to the choices of American shoppers who are looking for healthier foods without sacrificing the taste and flavor of their meals.”
That’s why Veroni added a “low sodium” claim in 2024, starting with Salame Milano, one of the world’s most beloved cured meats, she added.
