Ina Garten has done it again. She made such a fun meal and so easy to make. — We’re actually looking forward to making dinner this week. (Only Ina makes mid-week cooking fun!) Barefoot Contessa shares her amazing lemon pasta and roasted shrimp recipe that will be your new spring staple.
In a new video posted to Food Network’s YouTube channel, Garten shares this light and delicious recipe with viewers. “You won’t believe how easy this is,” Garten promises in the video. She added in the caption that it’s “the perfect meal to prepare in a pinch.”
She starts by roasting the peeled and deveined shrimp. While it’s cooking in the oven, she boils water for the pasta and adds some special ingredients. Garten uses her “really good” cappellini pasta for this recipe. While that’s boiling, she begins making her third (and final!) part of the meal, the flavorful sauce. She grates and squeezes lemon zest, lemon juice, and other ingredients herself.
Now it’s time to combine everything! “I love making the sauce in a big pot and adding the pasta to it so it soaks up the sauce and allows it to cook for a minute or so,” Garten explains. She first drains the pasta and then adds it to the pot. At this point, your kitchen should have a very nice lemon smell.
Once the shrimp is done, she pours it into the pot and tosses everything together. It’s light, delicious, and ready in just 25 minutes.
“We love this dish!!” one person commented. “We’ve been making cappellini for years and always just added shrimp. Now, let’s grill the shrimp. Thank you, Ina!”
“I made this for my parents tonight. Delicious! Another person praised it. You could also add some other subtleties like adding mushrooms or sun-dried tomatoes or using bucatini pasta instead of cappellini.” Adjustments are suggested. No matter how you cook it, this dish will quickly become a staple on your menu.
