GREENSBURG – The Extension Housewives enjoyed a “Greek Trip” last Thursday night, complete with dinner, photos, and a narration by Brian Jones. Rita Helmich won the cultural arts contest with her beautiful floral table runner and her wall hanging depicting a solar eclipse. The next big Extension Homemakers event will be a retreat on May 7th and 8th at Camp Higher Grounds. We invite you to submit your reservation and start planning your “trip down memory lane.”
We have received requests for new or used T-shirts from Operation Christmas Child. These were made as jump ropes for children. Shirts can be dropped off at the Extension Office or First Baptist Church. The next boys’ shorts sewing day is Friday, June 14th from 9 a.m. to 4 p.m. Mark your calendars now and make an appointment to attend the Extension Office. Even if you can’t sew, there are plenty of jobs you can do.
Here are some other family-favorite recipes.
Swedish meatballs
1 pound hamburger
salt and pepper taste
1/4 ton.nutmeg
1/2c.milk
1 1/2 c. breadcrumbs
1 egg
mix. Shape into balls and brown in oil. Add 1 can of chicken broth (or bouillon cubes or gravy mix). Simmer for 1 hour.
dark chocolate cake
2c. sugar
1/2c.shortening
2 eggs
T. Cocoa 3 heaping pieces
2 tons.baking soda
2c. Sour milk (2T vinegar and milk)
1 ton.vanilla
3c. Flour
cream sugar and shortening. Add remaining ingredients in order listed. Mix well. Place in a greased 9 x 13 inch pan and bake at 350 degrees for 40-45 minutes. (This makes a large cake; I often cut recipes in half.)
lemon cookies
1 box of lemon cake mix
1 pack.heath bit
1 egg
water 2 T (more or less)
1/4 c. vegetable oil
Mix together and bake on a cookie sheet at 375 degrees for about 11 minutes. Makes 2 dozen cookies.
ham and corn casserole
2c. Whole corn
2 beaten eggs
1 ton.sugar
1 1/2 tons.salt
1/4 c. diced bell pepper
2 T melted butter.
2c. Milk just before boiling
1c. Shredded cheese
1/4 c. diced onion
1c. Diced cooked ham
Mix all ingredients. Place in a pot of boiling water (double boiler method) and bake at 350 degrees for 1 hour or until done.
