
The First Lady of Ukraine attended the presentation of a new collection of recipes for school cafeterias by Evhen Kropotenko.
This was announced by the team of Yevhen Kropotenko, chef and ideologue of the Cult Food Project. This collection has been developed in support of the School Nutrition Reform Strategy led by Olena Zelenska.
“When they say ‘kropotenko recipe,’ the whole country knows what they’re talking about. The fact that he’s a famous chef and once took part in school nutrition reform makes me want him to know what he’s talking about.” Thank you. There is still a myth that Yevn strengthens his reforms and even that all of his recipes are mandatory. In fact, this wonderfully clear and detailed book is perfect for anyone who makes school lunches for their children every day. It’s a very nice base for that. And there’s a tip, but no one is forcing anyone to cook only according to that,” the first lady said.
This collection contains over 600 food recipes, 80 of which are lactose and gluten free. It incorporates both Ukrainian and world cuisine. All recipes comply with the requirements of relevant ministerial resolutions.
In addition to step-by-step recipes, flowcharts and examples of plating and garnishing are also included. Food can be prepared using any appliance. Olena Zelenska emphasized that many chefs trained at Reform’s culinary hubs are already cooking according to their own recipes, taking into account local peculiarities and needs.
“The main thing that has to change for all of us is the very idea of reform, the reason it all started: that children’s nutrition must be healthy. This is why all recipes, Every sourcing, every dish should be a theme. That’s what we want. Ideally, we’ll be raising people who understand healthy food and healthy eating,” the first lady emphasized.
The event was also attended by Minister of Health Viktor Liashko, Minister of Education and Science Oksen Lisovii, Ambassador of Switzerland to the Republic of Moldova to Ukraine, Chairman of the National Public School Feeding Association, and Director of the School Nutrition Reform Project Office Felix Bauman.
