This recipe makes 8-16 clusters
- • 1 cup semisweet or dark chocolate chips, melted
- • 5-10 large strawberries
- • 1/4 cup shredded coconut*
- • Coarse salt (optional)
*Since there is only 1 teaspoon per tablet, I use sweetened one, but you can use unsweetened as well.
Line a platter or baking sheet with parchment paper and set aside.
Cut the stems off the strawberries and slice each berry from top to bottom (you’ll get about 4-5 slices per strawberry). Make a cluster using 3 strawberry slices. Drop melted chocolate, 1 tablespoon at a time, into the center of each strawberry cluster. Sprinkle with shredded coconut and sprinkle lightly with optional salt.
Place the clusters in the freezer for at least 20 minutes or until the chocolate hardens. Transfer to a storage bag and store in the freezer for future snacking.
