I love how easy it is to make this dip using jarred roasted red peppers, but you can roast your own if you prefer. Lightly brush the peppers with olive oil and roast on a gas flame, on a medium-high flame grill, or directly under the broiler. Use tongs to turn the peppers occasionally until they are blackened all over. Transfer the peppers to a bowl, cover with plastic wrap or a lid, and let cool completely. Peel the peppers and remove the skin, seeds, and core.
