On Monday, April 8, Americans along a wide path dug from Texas to Maine will experience a total solar eclipse. Merritt Bates-Thomas, an Owensboro nutritionist and local TV, radio and Instagram food personality, has created an eclipse-inspired recipe that will be a hit at any watch party.
This recipe is a fun reinvention of hummus. Merritt’s Instagram page, The Kitchen Transition, is known for his creative (and healthy) twists on popular recipes. This week, she’s adding even more punch to her hummus.

Now that you understand what hummus is, here are some recipes you might want to try. Here’s how to make Merit’s Total Eclipse Hummus.
total eclipse hummus
1-10 oz container hummus
1-2 teaspoons olive oil
Chop cucumber slices
Assorted 1/8 cut cherry tomatoes and grape tomatoes
1/4 bell pepper, chopped
3-5 tablespoons tzatziki
microgreens or chopped fresh parsley for garnish
direction:
Pour the hummus onto a plate or platter. Drizzle olive oil over the hummus. Sprinkle the chopped vegetables over the hummus. Spread the tzatziki over the mixture and garnish with microgreens or parsley.
