Winter citrus and avocado salad with horseradish vinaigrette
service: 5-6
material:
- 1 blood orange, supreme
- 2-3 sumo mandarin oranges or mandarin oranges, peeled and sliced
- 2 dry oranges, peeled and sliced
- 1 avocado, sliced
- 1 shallot, sliced
- flake salt
- 3 tablespoons extra virgin olive oil
- 1 tablespoon sherry vinegar
- 1/2 teaspoon honey
- 1/4 cup parsley leaves (chopped)
- 1/4 cup grated fresh horseradish
Instructions:
step 1
- Peel all the citrus fruits and cut everything except the blood oranges into rounds.
- Make the most of leftover blood oranges.
- Remove the seeds, layer the fruit on a plate and garnish with sliced avocado and shallots.
- sprinkle with salt
Step 2
- Mix together olive oil, vinegar, honey, parsley, and half of the horseradish.
- Taste and adjust seasoning as needed
- drizzle over salad
Step 3
- Grate more fresh horseradish all over the salad
- Make it look like fresh snow
Note:
If you don’t have fresh wasabi available, you can substitute bottled, but just use 2 tablespoons and skip step 3.
