Of course, you can use frozen mangoes for this 40-minute meal, but I like to use fresh fruit if possible. The base of this curry is a yellow curry paste with coconut milk and aromatics like garlic and ginger, while chunks of chicken, slices of red pepper and bite-sized mango complete the cozy meal. For a meatless dinner, substitute a pound of diced firm tofu for the chicken.

Sausage and mango may seem an unlikely combination, but I assure you it works. Grilled meats (choose your favorite type of sausage) are especially delicious when topped with sweet and savory salsas.
